Sandesh
Sandesh is a delicate Bengali sweet made from fresh chenna, lightly cooked with sugar and shaped into soft discs or decorative moulds. Lighter and less sweet than many Indian sweets, it's a Bengali festive staple, especially during Durga Puja.

Sandesh Ingredients
1 litre full-fat milk; 2-3 tbsp lemon juice or vinegar, diluted with water; 1/2 cup powdered sugar; 1/4 tsp cardamom powder; a few saffron strands (optional); chopped pistachios for garnish.
